Food

For us food is a high priority. The bulk of the food consists of organic whole grains, beans, seeds & local vegetables, complemented with smaller amounts of fruits, nuts, seaweeds, eggs and fish, all prepared using macrobiotic principles.

Besides tasting and looking delicious macrobiotic food is known to activate your body’s self healing powers, reconnect you with your inner core and open up your senses to the world around you. This type of a diet has been the foundation of mankind for centuries before the industrial revolution, which made refined foods a part of our daily diet.

Preparing a macrobiotic meal is a process of conscious creation, which begins with focusing on the people, who is going to eat the meal.

The chef uses senses, knowledge and intuition to answer questions like:

  • What is the condition of the people, who are going to eat?
  • What condition do they need to have to live their dream?
  • What kind of atmosphere is needed to make today’s activities work well?
  • What kind of foods are available and in season?
  • Which time of the year is it?
  • How can preparation modify the available foods to create the desired result?

Macrobiotic food reconnects us with our inner core and true values, as well as with our history and the history of mankind.

Why macrobiotic food?

The usual western diet is extremely high in saturated fats, fast carbohydrates, animal products, refined foods and stimulants such as sugar, coffee, chocolate, strong spices, and alcohol. Eating less of these foods, makes it easier to connect with ourselves and each other. 

Although a vegan/vegetarian diet removes the animal products and much of the saturated fats, it often keeps the other extremes, which results in a very idealistic, but not so grounded and realistic,  approach to life.

Using the macrobiotic principles we aim to recreate physical and mental health by serving a more balanced – and simple – diet. 

Some people experience a change in diet as challenging, because coming closer to ourselves sometimes brings us in contact with issues and emotions that hasn’t been dealt with. Other people experience it as a solution to issues they have become so used to that they have forgotten life can be different.

Homemade bread

Freshly ground flour gives us the best quality and best tasting bread. Sourdough makes sure it is digestable. Seeds in the bread helps to stabilize blood sugar.

We use organic unrefined ingredients, and as much as possible local food. We have a small herbal garden and a bigger plot for growing vegetables.

Growing our garden

Already within the first weeks we moved our herbal garden here to be able to use our own herbs in our food. Every spring we prepare the garden with foods we love. Some of the harvest we share with the deers from the wood.
